Serving Size: 1 person, makes 4 small medium pancakes
- 1 large banana
- 1 tablespoon Cocoa Powder (Optional – Raw Cacao Powder)
- Vanilla Extract (optional)
- 2 eggs
Mash the banana until relatively smooth, add the tablespoon of Cocoa Powder, 2 eggs and a drop of Vanilla Extract and mix until combined.
Heat a tiny bit of oil/butter in a small pan until hot and ladle the mixture in the frying pan and cook on both sides!
Serve with toppings of choice, I had Greek Yoghurt, Blueberries & Cinnamon with a drizzle of Maple Syrup.
