This is a simple, low cost and delicious snack that can even be made into a salad.
1 can/jar of cooked chickpeas
Drain the can of chickpeas and rinse over some cold water. Place the chickpeas into an oven dish and drizzle over some olive oil, paprika and lemon juice. Mix with a spoon until the chickpeas are lightly covered.
Place in the oven at 170 degrees Celsius and bake for around 20 – 30 minutes. Keep an eye on them as they do have a tendency to burn.
Take them out and enjoy as a healthy hot or cold snack. If you have any leftovers why not use them as the base of a salad with some feta cheese, crunchy kale, pomegranate seeds and whatever other ingredients you may have lying around!
