3 Easy Breakfast Ideas

If your like me you’ll think breakfast can get a bit repetitive and boring. Sometimes I don’t have time for breakfast or might make a quick bit of toast to eat as I’m leaving the house.

Have a go at making your breakfast more exciting with these 3 breakfast easy and quick ideas! After all breakfast’s the most important meal of the day right?

Top tip: all 3 breakfasts have similar ingredients helping you to avoid wasting food and keep cost low – perfect!

1.Crumpets topped with Salmon & Poached Egg

Prep Time: 2 mins     |    Cooking Time: 5 mins     |       Difficulty: Easy         |       Price: £

Serving Size: One person.

  • 1 crumpet
  • 3 free-range eggs
  • Half a pack of smoked salmon
  • Splash of Vinegar


  1. Bring pan of water to the boil and add splash of vinegar. Create a ‘whirl pool’ so the water is spiralling.
  2. Carefully add the egg ensuring the yolk doesn’t crack. Cook for 3 minutes.
  3. Meanwhile toast the crumpets for 2 minutes and slice the salmon.
  4. Stack toppings on your crumpet.
  5. And you’re done. Get stuck in and enjoy! Nothing beats a perfectly runny poached egg!

2.Toast topped with Tomatoes, Salmon & Egg

Prep Time: 2 mins     |    Cooking Time: 8 mins     |       Difficulty: Easy         |       Price: £

Serving Size: One person.

  • 2 slices of seeded bread
  • 2 medium free-range eggs
  • 1 large tomato
  • Half a pack of smoked salmon



  1. Boil the eggs for 7 minutes.
  2. Meanwhile toast the bread, chop the tomatoes and slice the salmon.
  3. Peal the egg shell.
  4. Stack toppings on your toast.
  5. And you’re done. Get stuck in and enjoy!

3.Vanilla Protein Pancakes

  • 1 Fair Trade banana
  • 1 scoop of protein powder (vanilla, chocolate or strawberry)
  • 1 medium free-range egg
  • Toppings: 2 spoonfuls of Greek Yoghurt and strawberries,

Top tip: to make your pancakes even more sustainable, why not choose an eco-friendly protein powder? You could avoid whey and choose vegan protein, soy protein or organic sunflower protein.


  1. Put the banana, egg and protein powder into a blender and blend until smooth.
  2. Heat up fat in a frying pan. Pour the mixture in to make a pancake to the size of your liking (smaller works better).
  3. After the pancake is starting to cook on one side, flip it over to cook the other side.
  4. Stack your pancakes and add your toppings.
  5. And you’re done. Get stuck in and enjoy!
