This one was a camping favourite so it’s really easy to prepare, it’s not glamorous but it’s filling, comforting and cheap.
You will need:
- medium size pan
- 1-2 tspn olive or vegetable oil
- 1 onion
- 1-2 cloves garlic
- 1 teaspoon mustard (optional)
- Cheese grated (any as cheap as you like) about 100g
- Dried red split lentils about 250g
- vegetable stock cube (optional)
- Bread to accompany

Heat the pan and add the oil, fry your onions and garlic till it’s just about see through , turning a bit golden in places is ok.
Rinse your lentils in a sieve then add to the pan, add enough water to cover them plus about 3cm more. (add your stock cube and mustard if you are using them)
Now let it simmer, you want the water to be soaked up and the lentils to lose their bright orange colour and turn pale and kind of fluffy all the way through. If you take one out and pinch it there will be no hard bit. If the water all dries out and they are not cooked add a bit more.
Once you have a thick porridge type consistency – stir in your grated cheese until it melts. Season with pepper, salt and more mustard if you want to.
Dollop some in a bowl and dunk your bread in, or if it’s super thick spread it on your bread. YUMMMM
