Sausage and bean casserole

As winter goes on for what feels like forever, this quick and easy winter warmer is the perfect remedy to ease those January blues.

Beans and pulses are a cheap and nutritious way to bulk out your meals and add extra protein. Why not experiment and add a new bean or pulse you haven’t tried before? I added aduki beans last night and managed to make my meal stretch even further.

Serves 2


4 sausages (meat or vegetarian)

1 white onion

1 can of butter beans

1 tin of chopped tomatoes

1 carrot

1 cup of water

1 piece of bread (optional)

A pinch of chilli flakes (depending on how spicy you like your food)

A pinch of sugar

1 teaspoon of paprika

1 beef stock cube

2 cloves of garlic

A pinch of sugar



  1. Fry the onions and crushed garlic in a tablespoon of vegetable oil.
  2. Add the sausages.
  3. Once the sausages are cooked, add the chopped tomatoes, butter beans, carrot (chopped or grated) chilli, paprika, sugar and stock cube.
  4. Add one cup of water and bring to the boil.
  5. Simmer for 10 minutes
  6. Prepare the breadcrumbs by roughly chopping the bread or blitzing it in a food processor – adding herbs for extra flavour!
  7. Transfer the casserole to an oven proof dish, adding breadcrumbs on top if you want.
  8. Bake for 20-30 minutes
  9. Enjoy!
